Vegan Cream of Broccoli Soup



It is so important to get your greens in everyday.  
I try to eat a pound of greens daily.  
Why??  


It sounds like a huge amount, but it really isn't.  Have you ever seen what a pound of spinach cooks down to?  Almost nothing!  
Broccoli is one of my favorite greens and I love a good creamy broccoli soup.  This one was really tasty!  I topped it with some air fried frozen hash browns...quite delicious!


Such a tasty way to get in my greens!

Instant Pot Vegan Cream of Broccoli Soup

1 small onion, diced
3 cloves garlic, minced
6 cups roughly chopped broccoli florets and stems
14.5 oz. no salt or low salt vegetable broth
3 1/2 cups unsweetened plant milk
1/4 cup nutritional yeast
2 tsp of Table Tasty or your favorite no salt seasoning
1 tsp. ground mustard
1/2 tsp turmeric
1/4 tsp paprika
2 tbsp oat flour
pinch of nutmeg

Select the saute setting on your Instant Pot, add the onions and saute, stirring frequently, until translucent adding water if necessary.  Add garlic and cook for another minute. Turn off saute option and add broccoli, broth, 2 1/2 cups plant milk, nutritional yeast, no salt seasoning, mustard, turmeric and paprika.  Put on lid and make sure you have the knob on sealing and set it for 10 minutes on the manual setting.  While you are waiting for this to come to pressure and cook you can whisk together the remaining milk and oat flour in a small bowl. Manually release the pressure and then put it back on saute and add the milk/flour mixture. Stir until thickened. Stir in your pinch of nutmeg. Turn off the instant pot and take 2 cups of the mixture then put in your blender and blend until smooth then add it back to soup, stir, serve, enjoy!
