"Plantcakes" Thank you Love Chard!



I happened upon a wonderful Nutritarian blog called Love Chard.  A couple that have lost over 150 pounds combined blog about whole foods and the Nutritarian lifestyle.  It is an inspiring and great blog with some wonderful recipes and great tips.  They also coach and host an 8 week transformation.  You should check it out if you are interested in the Nutritarian way of life!


I found this recipe there.  And let me tell ya....it is a winner in my book!  Now these pancakes are not the light airy pancakes that you may be used to, they are filled with goodness, and while they aren't the prettiest pancake they are very delicious and have just the right amount of sweetness.  I took the recommendation to add almond butter and the berry "syrup".

Plantcakes [Nutritarian Pancakes]

adapted from Love Chard


2 cups oat flour [ground oats]
2 ripe bananas
1/2 cup vanilla almond milk
2 tablespoons flax seed
1 tablespoon chia seed
1 tablespoon hemp seeds/hearts
1 tablespoon almond meal
Sprinkle of cinnamon
Splash of vanilla
The batter will be THICK; that’s normal for this type of dense batter. Form into a small pancake shape in the pan and cook on medium heat. Once the bottom is cooked and starts to brown nicely, it should be easy to flip. Cook for a few minutes on each side until inside is cooked through.
Top with strawberry-blueberry “syrup” [frozen berries microwaved for about a minute] and fresh bananas. We also top ours with a little fresh ground raw almond butter to make a PB&J pancake! :)
